Pomegranate ice cream

For me, Pomegranate is a happy fruit. There is something nice about it – the richness in color, the texture, and more importantly the taste; the burst of sweetness makes me feel very happy. And the best way to enhance the happiness – make ice cream with pomegranate smile emoticon

Adjust the sugar according to the sweetness of the fruit, and keep some seeds for garnishing. The creamy and delicious ice-cream with that red ruby like pomegranate seeds… So perfect for the season!

You need –

  • Thick cream – 300 mls
  • Milk – ½ cup
  • Icing sugar – ½ cup or adjust to your taste
  • Pomegranate seeds – 1.5 cups plus ¼ cup for garnishing
  • Vanilla essence – ½ teaspoon

How to –

In a blender, juice the pomegranate seeds and stain.

In large bowl add the milk, sugar and whisk till the sugar has dissolved. Now add the juice, cream, essence  and beat well with a electric beater till everything is combined.

Pour the mixture into a container and cover tightly and freeze for an hour. Remove and beat with an electric beater for a couple minutes and into the freezer. Repeat this process 3-4 times at regular intervals to ensure that no crystals are formed and the ice cream is creamy. Into the freezer for a final freeze to set for 6-8 hours or over night undisturbed.

Remove the ice cream from the freezer 5 minutes before you serve so its easy to scoop it out. Garish with the remaining seeds before serving.
