For me, this post is quite special. Firstly,a review of my new bake-ware from “The Cooking Doctor” and secondly; a delicious and super soft cake. It got a bit delayed as both me and Saana were down with a nagging flu.
It’s the season for baking, and it becomes even more fun when you involve kids. It’s amazing to watch the little hands at work. And just on the right time, I got these wonderful products from “The Cooking Doctor”. Much of anticipation ever since she launched her products, I was keen on getting them. The designs, the color, were all so brilliant. I’m extremely happy that I got to use those wonderful cupcake cases.
Silicone bake-ware products have been on my mind but never took them seriously, until Jehanne had this discussion with me when she was planning to launch her line of products. Silicone bake-ware products are termed as “bake green “products as you avoid throwing away cupcake case, aluminum foils or parchment papers – a subtle way of doing your bit for the mother nature.
The Cooking Doctor’s silicone bake-wares are made of the finest quality that is 100% safe and FDA approved. Yes do keep in mind that a low quality bake-ware can be hazards. So always make sure you buy the best, and do not compromise on the quality.
The first product I used of the line was the cupcake liners. A box of cupcake liners has 12 cases and comes in 4 different beautiful shades. The cupcakes turned out super soft and perfectly baked. And yes they did slip off clean of the cases once cooled. However the baking time will be a little longer than the paper liners. It took me five minutes more, but the end result was wonderful. Fluffy cakes in those colorful cups were a treat to entice all the senses.

Over to the recipe, this was purely baked for the chocolate lovers at home. It turned very soft and velvety and frosted with the orange butter cream was sure wonderful.

You need –
For the cakes
- All purpose flour -100 grams
- Cocoa powder – 20 grams
- Caster sugar – 140 grams
- Baking powder – 1 ¼ teaspoons
- Salt – a pinch
- Unsalted butter – 40 grams @ room temperature
- Whole milk – 120 ml
- Egg – 1
- Vanilla essence – 1/4 teaspoon
- cupcake cases – 10 -12
For the frosting
- Icing sugar – 3.5-4 cups
- Unsalted butter – 115 grams
- Orange Juice – 2 -3 tablespoon
- Orange zest – ½ teaspoon
Preheat the oven to 170C.
In mixing bowl, sift the flour, cocoa powder, baking powder, salt. Add the sugar and butter and beat till everything is well combined and of sandy consistency.
In separate bowl whisk the milk, egg and essence. Gradually add this to the flour mixture and continue to beat on high till well combined and the mixture is smooth. Please do not over beat.
Spoon the batter into the prepared cupcake cases and bake for 25-30 minutes or till the tooth pick comes out clean when inserted in the middle of the cake. Cool them for 10 minutes and then place on a cooling rack to cool completely.
In mixing bowl, beat the butter till pale and fluffy. Gradually add the sugar, 1 cup at a time and alternating with the orange juice and zest. Beat well till the frosting is light and fluffy and until you get the desired consistency to pipe. Add more orange juice as needed.
when the cupcakes are cooled completely, frost the cakes as desired.
