Watermelon, feta and purple cabbage salad with honey-basil dressing

On a scorching summer day all you need is a plate of refreshing salad and an ice cold drink! This salad  just perfectly fit the bill; the fresh taste of basil, refreshing watermelon, tangy feta, crunchy cabbage amalgamate with honey-olive oil and paprika dressing – a real heat-buster. A light and extremely satisfying meal indeed!

You need –

  • Watermelon – cubed 3-4 cups
  • Purple Cabbage – ½ cup julienned
  • Feta – crumbled, 1/3 cup,
  • Fresh basil – 2 leaves plus 3 leaves for garnishing
  • Olive oil – 2 tablespoons
  • Honey – 1 tablespoon
  • Paprika – ½ teaspoon or to taste
  • Salt n pepper – to taste

How to –

In a small sauce pan, combine the olive oil, honey and tip in 2 basil leaves. Over low heat gently heat through and bring to a gentle simmer. Turn off the heat and allow the basil to infuse.  Let it cool to room temperature. Discard the leaves.

In a salad/mixing bowl, tip in the watermelon, cabbage, feta, paprika, Pour in the dressing and season with salt and pepper. Toss everything well until evenly combined.

Cover with a cling wrap and refrigerate for about 45 minutes. Garnish with fresh basil and Serve chilled.

  1. That looks so pretty to eat..I am not a sald fan but if there is any fruits in it, I love salads..I have only tried saldads with apples and mango but next time I will add watermelon too..lovely colour ,looks so summery !
