Happy Diwali to you and your loved ones!
Diwali / Deepavali – the festival of lights! Everything about Diwali is associated with joyous moments – beautiful rangolis, fireworks, shopping, food and those beautiful sweets. For now, I will concentrate on the last bit – the sweets! The legend says Diwali is the triumph of good over evil, and this all about the good stuff – the melt-in-your-mouth Gulab Jamuns.
You need –
For the dough:
- Full fat milk powder – 1 cup
- All purpose flour – ¼ cup
- Baking soda – ¼ teaspoon
- Warm milk – 4 tablespoons
- Ghee – 2 teaspoon
For the sugar syrup:
- Caster sugar – 1 cup
- Water – 1 ½ cups
- Green cardamom – 3
- Few drop of lime juice
- Rose essence – 2 drops
How to –
To make the sugar syrup, in a sauce pan add the sugar, water, cardamom and bring to a boil, stirring constantly till the sugar has dissolved. Continue to boil till the syrup is slight thick. Now add a few drops of lime juice and rose essence. Stir well and remove from the heat.
while the syrup is boiling, make the dough, in a large bowl put the milk powder, flour, baking soda and mix well. Add the ghee and mix well. Now gradually add the milk little at a time and kneed to smooth and soft dough
Divide the dough and roll into a walnut sized smooth balls. Make sure there are no cracks.
Heat a oil in frying pan/ skillet. Over a medium heat deep fry the balls till golden brown. Remove the balls with a slotted spoon and Soak them in the sugar syrup for at least 30-45 minutes.
Serve warm and enjoy!
