Okra, is a staple ingredient in South Indian cuisine and packed with healthy goodness. This simple stir-fry has always been my favourite and goes well with a bowl of yoghurt rice.
You need –
- Okra – 500 grams
- Chili powder – 1.5 teaspoon or to taste
- Turmeric powder – ¼ teaspoon
- Salt to taste
- Coconut oil – 2 tablespoons as required
How to –
Wash the Okra and pat dry with a clean kitchen towel or paper towel. Chop the okras finely and set aside.
Heat a heavy bottom pan. Turn the heat to medium-low and add about 2 tablespoons of oil and immediately add the chili powder and turmeric powder. Sauté till fragrant and make sure not to burn the powders.
Add the chopped okras, season with salt. Stir fry the okras till done and slightly crisp. Turn the heat off and serve hot with rice and curry. I like it with my curd rice 🙂
