Banana butterscotch muffins

Wonder if anyone is ever going to grumble about starting the day with these great combo muffins. Utterly luscious and I have already made them twice in the last 2 weeks.

You need –

  • All purpose flour – 1 & 2/3 cups
  • Sugar – 1/2 cup
  • Baking powder – 1 teaspoon
  • Baking soda – 1/2 teaspoon
  • Salt – 1/4 teaspoon
  • Eggs – 2, @ room temperature
  • Vegetable oil – 1/2 cup
  • Ripe banana – 2, ripe and mashed
  • Butterscotch morsels – 3/4 cups

How to –

Preheat the over to 200 C . Line a 8 –10 paper muffin liners.Sift the flour, baking powder, baking soda and salt. Set aside.
 
In a mixing bowl, beat the eggs and oil till well combined. Add the flour mixture and sugar and gently fold the mixture till well combined. Add the mashed bananas and mix.
 
Fold in the morsels and divide the batter equally into the lined paper muffin liners and bake for 20-25 minutes or when toothpick inserted in the center of the muffins comes out clean. Cool them for 10 minutes and then place on a cooling rack to cool completely.

  1. sheesh… look at them!!! i've been eyeing the butterscotch chips at the hersheys outlet in dubai mall (you don't find it elsewhere here, or maybe i've not searched much!) and now seeing this bake of urs, i am really tempted to pick up a pack soon!!! those muffins look adipoli… and love the background of that glass of sulaimani… 🙂
