Creamy avocado pasta

I am not an avocado fan but my daughter is and this is her current favorite. What I love about the sauce is that it’s extremely easy to whip up. So this is just perfect for a busy week nights too.

For Vegetarians you could add mushrooms instead of Bacon. You will have to alter the dried herbs and garlic quantity accordingly.

IMG_5019You need –

  • Bacon slices – 150 grams
  • Spaghetti  – 200 grams ( I used wholemeal pasta)
  • Avocado – 1
  • Garlic clove – 1 large, minced
  • Dried thyme – 1/3 teaspoon
  • Dried basil – 1/3 teaspoon
  • Heavy cream – 1/4 cup
  • Grated parmesan cheese – 2-3 tablespoons
  • Olive oil – 2 tablespoon or as required.
  • Salt and pepper – as per taste.

 How to –

Cook the pasta as per the packet instructions. In blender put the avocado, cream and blitz till smooth and creamy.

Heat oil in pan. Add the garlic and cook till fragrant. Add the dried thyme and basil. Tip the bacon and cook till crispy.  Turn off the heat and set aside.

When the pasta is done, drain well and return to the pan.  Reserve ¼- ½ cup of the pasta water.  Over a low heat add the avocado, cheese and bacon to the pasta and toss well.  If the sauce too thick; add the reserved pasta water as required. Add salt and pepper to taste.

Cook for 4-5 minutes or till  heated through; stirring continuously. Turn off the heat, Sprinkle some more cheese and serve immediately.

  1. Wish you had posted this a day before. I made pasta yesterday after pondering for a long time to try out a different one and finally landed on the usual recipe which I make often. Next time will surely go for this creamy avocado pasta.

  2. It looks creamy and rich without addition of cheese…Avacado is my current favorite too… I think we would love it…will make it soon
