Fennel infused mango sorbet

Getting a perfect scoop of ice-cream is always  a herculean task for me. But I did manage to get an ‘OK’ one for the  photo, albeit a few attempts.

On the recipe – Fennel is known for its flavor and aroma. I like the flavor to be mild and almost like its there, but not there! Variations can be done as per individual preferences. The same goes for sugar as well, adjust according to your taste and also the sweetness of the fruits.

You need –

  • Mango puree – 1.5 cups
  • Orange juice – ¼ cup
  • Water – 1 cup
  • Fennel seeds – ¼ teaspoon
  • Sugar – 2 tablespoons or as per taste

How to –

In a saucepan, put the sugar, fennel and water and bring to rolling boil stirring frequently. Turn off the heat and allow to cool completely. Once cooled strain and set aside.

In large bowl combine the mango puree, orange juice and the sugar water.  Stir well till the mixture is well combined.

Turn on the ice cream maker and transfer the mixture into the freezer bowl.  Churn  for about 25-30 minutes or till you get the desired creamy consistency.

Transfer into a airtight freezer safe container and into the freezer  to set for 3-4 hours undisturbed. Remove from the freezer 5 minutes before you serve so its easy to scoop it out.

  1. Love the flavor of fennel with mango.It should be really yum.
    For getting a perfect scoop try dipping the ice cream scooper in piping hot water for a while then wipe and scoop.I hear using glass container to freeze produces lesser ice crystals and smoother sorbet donoo how far that is true 🙂

  2. I have tried mango sorbet with basil leaves but this looks unique n flavorful with fennel,I love fennel..would love to try that way too,Rekha ..looks yumm 🙂
