This makes a great dessert especially when you have guest over as they are so easy to put together. Team it up with a scoop of ice-cream and they are delectable!
You need –
- Red plums – 500 grams, remove the stone and quartered
- Muscovado sugar – 50 grams
- Ground cinnamon – ¼ teaspoon
- Chilled butter – 60 grams, cubed
- All purpose flour – 75 grams
- Breadcrumbs – 1/2 cup
- Golden caster sugar – 50 grams
How to –
Pre- heat the oven to 190 C.
In a pie dish (oven proof) put the plums, Muscovado sugar and cinnamon. Gently toss till everything is well combined. Set aside.
Now in a food processor, put the flour and cubed butter and pulse a couple of times till the mixture resembles crumbs alternatively you could work with your finger tips gently till the mixture resembles crumbs. Transfer to the flour mixture to a bowl and to this add the caster sugar and breadcrumbs and mix well.
Sprinkle the flour mixture over the plums and bake for about 20-25 minutes or till the fruit mixture is bubbly and the topping is golden brown.
Serve warm. Add a scoop of ice-cream if you like.
