These cranberry muffins are quite easy to make, and is absolutely delicious. My little girl loves muffins and the merrier if it’s with chocolate; so some generous sprinkle of choco-chips!
You need –
- All-purpose flour – 1 cup
- Dried cranberries – ½ cup
- Choco chips – ¼ cup
- Baking powder – ¾ teaspoon
- Salt – ¼ teaspoon
- Unsalted butter – 56 grams. @room temperature
- Caster sugar – ½ cup
- Eggs – 1
- Zest of 1 lemon
- Lemon juice – ½ teaspoon
- vanilla extract – 1 teaspoon
- Milk – ¼ cup
How to –
Pre-heat the oven to 190 C. If using the muffin tins then grease them or line with cupcake/muffin cases.
In a bowl, sift the flour, baking powder and salt. Set aside.
In a mixing bowl, beat the Sugar and butter till light and pale. Add in the egg and beat till well combined. Add the vanilla essence, lemon zest and Juice.
Add the flour mixture alternating with the milk and gently mix till everything is well combined. Now gently fold in the cranberries.
Spoon the mixture into the prepared muffin tin or cupcake/muffin cases. Sprinkle the choco-chips on top and bake for 40-45 mintues or when toothpick inserted in the center of the muffins comes out clean. Cool them for 10 minutes and then place on a cooling rack to cool completely.
