Lemongrass and watermelon cooler

On a hot day all you need is a glass of this refreshing juice! Omit the ginger if you don’t like that additional zest.

You need –

  • Watermelon, seedless & cubed – 3 cups
  • Water – 3 cups
  • Fresh stalks of Lemongrass – 4, cut into ¼ inch pieces
  • A small slice of fresh ginger
  • Sugar – 1/4 cup or to taste
  • Ice cubes – 1 cup

How to –

In a saucepan combine the water, sugar and lemongrass and bring to a boil. Turn the heat off and cover with a lid and let it steep for 25-30 minutes.

Remove the stalks and pour the mixture into juicer, Add the fresh ginger, ice cubes and process till smooth and the ice cubes are crushed.

Serve chilled.
