M & M’s cookies

A few weeks back, Saana had a Christmas party at school, where in all the kids (or their moms) contributed with some party bites. One of her friend had brought these lovely cookies with her, and Saana loved it so much that she was all behind me asking to bake it for her. Earlier this week I managed to catch-up with that friend’s mom and got the recipe from her! And here they are – soft and chewy with crispy edges, and very colourful. Sure to be an instant hit with kids.

You need –

  • All purpose flour – 1.5 cups
  • Light brown sugar – 1/2 cup
  • Caster sugar – 1//2 cup
  • Baking soda – 1/2 teaspoon
  • Fine salt – 1/4 teaspoon
  • Unsalted butter – 113 grams or 1/2 cup, softened
  • Egg – 1, at room temperature
  • Vanilla extract – 1/2 teaspoon
  • M&M’s – 3/4 cup

How to –

Preheat the oven to 180C. line a baking tray and line with parchment paper. In a bowl, sift the flour, salt and baking soda.

In a mixing bowl, cream the butter, brown and caster sugar till well combined. Add the egg and vanilla extract and beat till light and fluffy.

Add the flour mixture and stir well. Add the M&M’s and mix well till everything is well combined.

Scoop a tablespoon of the dough and drop it on to the prepared baking tray with an inch space between each (do not press down the dough). Bake for 10-12 minutes or until light brown on the edges and still slightly soft in the center.

Allow the cookies to firm up on the tray for about 10 minutes and  then transfer to a cooling rack.
