Citrus cupcakes


You need –

  • Cake flour – 130 grams
  • Vegetable oil – 100 mls
  • Caster sugar – 125 grams
  • Egg – 3, @ room temperature
  • Candid fruits mix -75 grams
  • Zest of 1 orange
  • Zest of 1 lemon
  • Baking powder – 1 teaspoon




How to –

Preheat the oven to 160 C. Sift the baking powder and flour. Set aside.

In a mixing bowl beat the sugar and oil until the sugar has dissolved. Add the egg one at a time and beat till well combined.

Add the flour mixture and gently fold the mixture till well combined. Make sure not to over beat/mix the batter else they will not be light and fluffy.

Fold in the Candid fruits and zest. Divide the batter equally into the  prepared cupcake cases and bake for 20-25 minutes or when toothpick inserted in the center of the muffins comes out clean.
