You need –
- Coco powder – ¾ cup
- All purpose flour – 1-1/3 cups
- Baking soda – ½ teaspoon
- Instant coffee powder – 1 teaspoon
- Salt – ¼ teaspoon
- Caster sugar – 2 cups
- Unsalted butter – 160 grams, melted
- Eggs – 2
- Vanilla extract – 1 teaspoon
- Walnuts – 100 grams, chopped
- Chocolate chips – 1 cup
How to –
Pre-heat the oven to 180 c. In bowl sift together the flour, salt and baking soda and set aside. Grease 13x9x2-inch baking pan and line with parchment paper
In another mixing bowl, add the coco, instant coffee powder, melted butter, boiling water and stir till well combined. add the sugar and mix well.
Beat in the eggs one at a time and stir in the vanilla extract. Fold in the flour and mix gently till everything is well combined. Add the chopped walnuts and choco chips. Fold in gently.
Pour the batter into the prepared cake pan and bake for 35-45 minutes or till the brownie pull away from the pan and has a nice crust on top. Set aside to cool for 10 minutes.
Cut into squares and serve warm with some vanilla ice-cream.
