You need –
- All-purpose flour – 1 cup
- Baking powder – 1.5 teaspoons
- Baking soda – ¼ teaspoon
- Salt – ¼ teaspoon
- Caster sugar – 125 grams
- Walnuts – 50 grams, chopped
- Choco-chips – 140 grams (I used white)
- Eggs – 2, at room temperature
- Butter – 90 grams, melted
- Milk – 4 tablespoons
- Orange juice – ½ cup
- Zest of 1 orange
How to –
Pre-heat the oven to 180 C. Grease a 9×5 loaf pan.
In a bowl sift together the flour, baking powder, baking soda and salt. Add the sugar and mix well. Add the walnuts and ¾ of the choco-chips to the flour mixture and mix. Set aside.
In a mixing bowl, add the melted butter, egg, orange juice, zest and vanilla essence. Beat will till well combined. Now slowly add the flour mixture to the wet ingredients and stir with a wooden spoon till everything is just blend.
Spoon the batter into the greased loaf pan. Sprinkle evenly with the remaining choco-chips and bake for 50-60 minutes or till the toothpick comes out clean when inserted in the middle of the loaf.
Cool the loaf for 10 minutes in pan and then on a wire rack.
