Rosemary and cheddar cheese biscuits

You need –

  • All purpose flour – 150 grams
  • Chilled butter – 150 grams, cubed
  • Cheddar cheese – 150 grams
  • Fresh rosemary, chopped – 2 teaspoons

How to –

In a food processor, place the cheese, butter, rosemary, flour and process till they come together.

Place the dough on a floured surface and knead for a couple of minutes.  Cover with a cling wrap and roll to flat a bit with your rolling pin. Refrigerate for an hour or till the dough is firm enough to work.

Line a baking tray with baking sheet.

Remove the dough from the cling wrap and roll into a 5 mm thickness. Using a cookie cutter, cut into shapes you like. Place the cut dough on the baking sheet and refrigerate for another 20 minutes.

Pre-heat the oven to 180C and bake the biscuits for 10-12 minutes or till golden. Remove from the oven and allow to cool completely.

Serve with your favorite cheese or dips.
