Custard cookies

Absolutely delicious and melt-in-your-mouth kind of cookies, and quite easy to work out! Do ensure that the dough is not over processed or it will not get the fine texture, as it should be. And make sure that you’re using a good quality butter.

You need –

  • Butter, softened – 250 grams
  • Icing sugar – 1/2 cup
  • Vanilla extract – 1 teaspoon
  • All purpose flour – 1-3/4 cups
  • Custard powder – 1/2 cup

How to –

Pre-heat the oven to 180C line a baking tray with parchment paper. Sift the flour and custard powder and set aside.

In food processor, place the sugar, butter and vanilla essence  and process till well combined.  Add the flour-custard and pulse till everything is just combined. Please do not over mix.

Roll the dough into small walnut sized balls and place them on the prepared baking sheet. Dip a fork in the flour gently press the dough and slightly flatten.

Bake the cookies for 12-15 minutes or till the cookies turn light golden; Rotating the sheet halfway through for even baking.

Remove and place them on a wire rack to cool completely.
